Cardamom plants (Elettaria cardamomum) grow mainly in higher and shaded areas near tropical forests with relatively high rainfall. These conditions are mainly found in Southeast Asia and Central America. Cardamom is also known as green cardamom and is related to ginger. Cardamom has a delicious sweet and pungent smell. Cardamom tastes like bergamot, lemon and camphor. The pods are dried after harvesting and then become matt green in colour. They are 1.5 to 2 cm long.

Sie gehört zur Familie der Leguminosen. Die sogenannte Buschbohne wird vor allem in Indien und Pakistan von Juli bis Dezember angebaut. Qualität, Verfügbarkeit und Preise sind jedoch sehr stark vom Monsun in diesem Zeitraum abhängig. Rajasthan, Gujarat und Haryana gehören zu den wichtigsten Anbauregionen. Die trockenen Guarbohnen werden gedroschen, um die Guarkerne (seeds) aus der Bohne zu gewinnen. Mit einem weiteren Schritt wird aus dem Kern durch Trennung von Schale und Keim das Hydrokolloid Guar (Split) hergestellt.
